Velvet pastries

Materials:

  • 50 gram FunCakes Mix for Bavarois Strawberry
  • 60 ml water
  • 250 ml whipped cream
  • FunCakes Sugarpearls gold
  • FunCakes FunColours Velvet spray Red
  • Bollicine Mold e.g. Silikomart
  • 3 baked cupcakes (in slices for the bottom)

Preparation:
Cut the cupcakes into 1 cm slices, so that they fit in the mold. Beat the whipped cream, but not completely stiff. Add 60ml water to the mix for bavarois and immediately fold it into the whipped cream. Fill the mold with the bavarois and cover it with a slice of cake. Put this in the freezer overnight.

Keep the spray at room temperature 20-25°C 2 hours before use. Shake well and warm up the can in warm water between 25-35°C.

Remove the frozen pastries from the mold and spray the velvet spray at a distance of 20-25 cm on the pastries. Place a golden sugar pearl on the pastries and let it defrost slowly. Let the pastries rest for at least 4 hours before serving.
