Thumbprint cookies with lemon-meringue drizzle


  • 500 gram of FunCakes Mix for Tartelettes
  • FunCakes Fruity Spread – Raspberry
  • FunCakes Fruity Spread – Lemon
  • FunCakes Flavourpaste – Lemon Meringue Pie
  • 200 gram of soft unsalted butter
  • 1 egg
  • 1 egg wash
  • 25 ml of water
  • FunCakes disposable decorating bag 30 cm
  • FunCakes Magic Roll-Out Powder
  • Wilton parchment paper
  • Patisse Wooden Tassel -1,5cm-
  • Plastic foil

Preheat the oven to 200°C (convection oven 180°C). Prepare the Mix for Tartelettes as indicated on the package. Wrap the dough in plastic foil and let it rest in the fridge for an hour. Then create balls of about 5 cm diameter and flatten them to a thickness of 1 cm on a with Magic Roll-Out Powder covered work surface. Push a dimple in the middle with your thumb. Fill two decorating bags with one of the two fruity spreads and fill the dimples with it. Brush the cookies with egg wash and bake them for about 20 minutes in the preheated oven. Let them cool down completely after baking. Fill a decorating bag with Lemon Meringue flavour paste, cut off a very small tip of the bag and drizzle this over the biscuits.
