Saint Nicholas speculoos cake


  • 500 gram FunCakes mix for Cookies
  • 150 gram butter
  • 2 eggs (approx. 100 gram)
  • 20 gram FunCakes speculoos spices
  • 8 apples, in parts
  • 30 gram sugar
  • 2 tsp cinnamon
  • 250 gram FunCakes almond paste
  • 1 egg
  • Baking pan round 22-24 cm
  • 250 ml whipping cream
  • 20 gram sugar
  • FunCakes disposable decorating bag with tip
  • FunCakes almond flakes
  • FunCakes marzipan Saint Nicholas decorations

Preheat the oven to 170°C (convection oven 150°C). Knead 500 grams mixture, 150 grams butter, 20 gram speculoos spices and 1 egg (50 grams) to a firm dough. Let it stiffen in the fridge for at least 1 hour.

Roll the dough out onto a work surface dusted in flour and cover the bottom and sides of the baking pan with about ¾ of the dough.

Mix the egg with the almond paste and spread it over the bottom of the cake. Mix the sugar and cinnamon with the apples and place the mixture in the mould.

Roll out the rest of the dough and cut it into strips and put these over the apples. Lubricate the strips with a beaten egg. Decorate the cake with almond flakes. Bake the cake for approx. 50-60 minutes.

Beat the cream with the sugar and pipe several whipped cream swirls on the cake and decorate them with the marzipan decoration.
