Naked red velvet cake


  • 500 grams FunCakes mix for Red Velvet Cake
  • 3 eggs (approx. 150 gram)
  • 200 ml vegetable oil
  • 100 ml water
  • Round baking pan 10 & 15 cm
  • 500 ml whipping cream
  • 250 grams mascarpone
  • 50 grams sugar
  • FunCakes flavour -Sparkling Wine-
  • FunCakes Icing sugar
  • Various fruits

All the ingredients need to be at room temperature. Preheat the oven at 175°C (convection oven 160°C).

Put 500 gram mixture,3 eggs, 200 ml vegetable oil en 100 ml water in a bowl and mix for 6-8 minutes to a light batter. Pour the batter into a greased baking pan till approx. 2/3 full. Bake the cake the middle of oven in 35 minutes. Let the cake cool down after baking.

Whip 500 ml cream with 50 gram sugar. Add the mascarpone and champagne flavouring with a spatula. Cut the cakes in three layers. Fill a decorating bag with the mascarpone cream and fillt he cakes. Place pieces of fruit on the cakes and stack them.

Decorate the cake with fruit and some icing sugar.
