Lemon pastries


  • 3 square slices of puff pastry
  • 100 gram FunCakes mix for Crème Pâtissière
  • 250 ml water
  • 250 ml whipping cream
  • 25 gram sugar
  • 2 teaspoons FunCakes flavouring lemon
  • FunCakes dip ‘n drip white
  • FunColours Edible FunColours Gel – Yellow
  • Parchment paper
  • FunCakes disposable decorating bag

Preheat the oven to 200°C (convection oven 180°C). Let the puff pastry slices defrost and cut them into four equal squares. Prick the slices equally in with a fork, so the puff pastry will not rises very much. Bake the square slices of puff pastry in 15 minutes and let them cool down.

Mix 100 grams mix for crème pâtissière with 250 ml of water and whip the cream with a whisk or mixer about 5 minutes until smooth. Let the room stiffen for a while. Whip the cream with the 25 grams of sugar and add 2 teaspoons of the lemon flavouring.

Make the fondant glaze yellow with the colouring. Dip the 6 puff pastry squares in the fondant glaze. The 6 other squares will form the bottom of the pastries.

Pipe a layer of lemon whipped cream and then a layer of the crème pâtissière on the bottom squares. Put the puff pastry square with fondant glaze on top. Finish it with a decoration of your choice, such as blackberries.
