Gin-Tonic & Mojito cookies


  • 500 gram FunCakes Mix for Cookies
  • 150 gram FunCakes Flavoured Fondant Mojito
  • 150 gram FunCakes Flavoured Fondant Gin-Tonic
  • FunCakes Edible FunColours Gel – Baby Blue
  • 250 gram FunCakes Mix for Royal icing (pre-made and diluted till a thickness of cottage cheese)
  • FunCakes decorating bag 30 cm (2x)
  • FunCakes coloured sugar green
  • FunCakes coloured sugar white
  • FunCakes Magic Roll-Out Powder
  • FunCakes Icing Sugar to roll out on
  • 1 egg
  • 150 gram soft unsalted butter
  • Wilton piping gel
  • Wilton Cookie cutter set summer
  • Wilton rolling pin
  • Wilton parchment paper
  • Wilton tip 2 (2x)
  • Straws
  • Plastic foil

Prepare 500 gram Mix for Cookies as indicated on the package or in this basic recipe. Wrap the dough in plastic foil and let it rest in the fridge for an hour. Meanwhile, preheat the oven to 180°C (convection oven 160°C). Get the dough out of the fridge, knead well until it’s soft again and roll out on a with Magic Roll-Out Powder covered work surface until a 2-3 mm thickness. Cut out the cookie and place them with some space between on a baking tray covered with parchment paper. Bake the cookies for 10-12 minutes until golden. Let them cool down.

Knead the fondant well and roll it out on a with icing sugar covered work surface until it has a thickness of 2 mm. Cut out the top of the cocktail glasses and glue them on the cookies with some piping gel. Fill a bag with tip 2 with some diluted icing. Colour the remaining icing light blue with the colour gel and fill up the other bag with tip 2.

Pipe a bit of white icing on the top of the cookie and dip this in the coloured sugar. Cover the bottom of the glasses with the light blue icing and give it some details by adding a white icing stripe. Cut the straws to the correct size and use some white icing to stick them on to the cookies. Support them with some paper to dry. Remove the straws before consuming the cookies.
