Easter mirror glaze


  • 250 gram of FunCakes Mix for Cupcakes
  • 50 gram of FunCakes Mix for Bavarois – Naturel
  • 50 gram of FunCakes Mix for Bavarois – Blood Orange
  • 1 jar of FunCakes Mirror Glaze
  • FunCakes Edible FunColours Gel – Orange
  • FunCakes Confetti Metallic Green
  • FunCakes Confetti Metallic Orange
  • 120 ml of water
  • 500 ml whipped cream
  • 2,5 eggs
  • 125 gram of soft unsalted butter
  • FunCakes cake board silver/gold round 16 cm
  • Round silicone mould, for example the Girotondo mould from Silikomart
  • Wilton parchment paper
  • Measuring can

Preheat the oven to 180°C (convection oven 160°C). Prepare 250 gram of Mix for Cupcakes as indicated on the package or in. Cover a baking plate with parchment paper and put the batter on it, in the shape of and circle of 15-20 cm. Bake the cake for 15-20 minutes. Beat the whipped cream. Put the natural and blood orange bavarois together in a bowl and add 120 ml of water. Stir until all lumps have been removed and then add it to the whipped cream right away. Stir firmly and fill the silicone mould with it. Place the cake board on the cake, cut off around it and place the cake in the bavarois. Put this in the freezer for a whole night.

Place the cake board on top of the cake and remove the mould. Place the cake on some kind of higher surface, for example a bowl placed upside down, to make sure the glaze can completely drip over it. Colour the mirror glaze light orange and fill a measuring can with it. Pour this right after stirring over the bavarois. If you don’t pour it right away, the mirror glaze will thicken again which won’t give the right results. Let the glaze drip over the cake for at least half an hour. Afterwards, remove the drips on the bottom with a spatula. Decorate with a mix of green and orange confetti an put the cake in the fridge until further use.
