Cream pastries

Materials:

  • 500 gram FunCakes mix for Cookies
  • 1 egg (approx. 50 gram)
  • 150 gram butter
  • 500 ml water
  • Little baking pan 6 cm
  • 200 gram FunCakes mix for Crème Pâtissière
  • 70 ml water
  • 180 gram sugar
  • 100 gram egg whites
  • 20 gram sugar
  • 100 gram FunCakes chocolate melts dark
  • FunCakes marzipan chrysanthemum
  • FunCakes disposable decoration bag
  • Burner
  • Sugar thermometer

Preparation:
Preheat the oven at 180°C (convection oven 160°C). Knead 500 grams mixture, 150 grams butter and 1 egg (50 grams) to a firm dough. Let it stiffen in the fridge for at least 1 hour.

Roll out the dough on a floured work surface (0.5 cm thickness). Cut out circle and fill the small baking pans. Bake the cookies in approx. 12 minutes until golden. Let the cookies cool down.

Put the desired quantity of melts into a plastic or glass bowl. Place this bowl in the microwave and melt the melts at maximum power (± 800 Watt). Every 15 to 20 seconds, remove the chocolate from the microwave and stir it well so that the temperature is spread through it evenly. Continue doing this until the chocolate is nearly melted; small pieces of chocolate may still be visible. Stop warming and stir the chocolate well until all the pieces of chocolate are melted and you have a uniform mass of chocolate. Cover the cake on the inside with chocolate and let it harden in the refrigerator.

Add 500 ml of water per 200 grams of Crème Pâtissière mixture and beat for approx. 5 minutes to a smooth mass. Let the cream set. Pipe in every cookie a little swirl of crème pâtissière.

Boil 70 ml water with 180 grams of sugar until 121°C. Beat the egg whites with 20 grams of sugar to whipped egg whites. Pour the sugar syrup radially on the foam and beat gently until the whipped egg whites has cooled down. Put the whipped egg whites in a decoration bag and pipe swirls on top of the room.

Burn the whipped egg whites swirls with a burner, but be careful not too close. Decorate the cake with the marzipan chrysanthemum.
