Coconut chocolate truffles

Materials:

  • 150 gram FunCakes mix for Enchanted cream®
  • 100 ml milk
  • 100 ml water
  • Tray covered with parchment paper
  • Decorating bag with tip 12 from Wilton
  • Picks
  • 400 gram FunCakes chocolate melts dark
  • 2 tablespoons FunCakes flavour coconut
  • 50 grams coconut

Preparation:
Mix 150 gram mix for Enchanted Cream® with 100 ml milk and 100 ml water in 3 minutes at high speed. Add the flavour and mix it.

Place tip 12 in a decorating bag and fill this with the cream. Pipe swirls on the tray. Place a pick in every swirl and place the tray in the freezer for at least 60 minutes.

Fill a plastic or glass bowl with 400 grams chocolate melts. Place this bowl in the microwave and melt the melts at maximum power (± 800 Watt). Every 15 to 20 seconds, remove the chocolate from the microwave and stir it well so that the temperature is spread through it evenly. Continue doing this until the chocolate is nearly melted; small pieces of chocolate may still be visible. Stop warming and stir the chocolate well until all the pieces of chocolate are melted and you have a uniform mass of chocolate.

You can also melt the chocolate in a chocolate melter. This keeps the chocolate liquid and is handy because the chocolate cool downs quickly due to the cold swirls.

When the swirls are completely frozen, remove them from the fridge in portions of 5. Pick up the swirl at the pick and dip it in the chocolate. Keep the truffle horizontally and tap off the excess chocolate. Place the swirl on a plate, remove the pick and decorate with the coconut.
