Caramel chocolate mini cakes


  • 250 grams FunCakes mix for Caramel Cake
  • 125 gram butter
  • 2 eggs (approx. 100 gram)
  • 2 tablespoons water
  • Mini cupcake pan
  • 250 grams FunCakes chocolate melts milk
  • FunCakes SugarBites soft toffee

All ingredients need to be at room temperature. Preheat the oven to 160°C (convection oven 140°C).

Mix 250 grams of the mixture, 125 grams butter, 2 large eggs and 2 tablespoons of water in a bowl on low speed for 4 minutes to a smooth batter. Grease a mini cupcake pan. Pour the batter into the pan and bake the mini cupcakes in the preheated oven for approx. 15 minutes until golden. Let the mini cakes cool down.

Put the desired quantity of melts into a plastic or glass bowl. Place this bowl in the microwave and melt the melts at maximum power (± 800 Watt). Every 15 to 20 seconds, remove the chocolate from the microwave and stir it well so that the temperature is spread through it evenly. Continue doing this until the chocolate is nearly melted; small pieces of chocolate may still be visible. Stop warming and stir the chocolate well until all the pieces of chocolate are melted and you have a uniform mass of chocolate.

Dip the mini cakes in the chocolate and sprinkle a few sugarbites over the chocolate. Put the mini cakes in the refrigerator until they are served.
