Blood orange dessert with chocolate sponge fingers


  • 700 grams quark
  • 100 grams FunCakes mix for Bavarois -Blood orange-
  • 120 ml water
  • Dessert glasses
  • 100 grams FunCakes mix for Sponge Cake
  • 76 grams beaten egg
  • 1 tablespoon water
  • 2 tablespoons cacao powder
  • Granulated sugar
  • Decorating bag
  • Baking paper
  • Mandarins parts

Mix the bavarois mix 120 ml water and fold this mixture directly gently through the quark. Full the dessert glasses with the mixture and place them in the refrigerator to stiffen for approx. 1 hour.

Preheat the oven to 200°C (convection oven 180°C). Mix 100 gram mixture with 76 gram egg and 1 tablespoon water. Mix at high speed for 7-8 minutes. Add the cacao powder and mix at low speed for another 2-3 minutes.

Sprinkle a thick layer of sugar on the baking paper. Fill a decorating bag with the batter and cut of the top, with an opening of 8 mm. Pipe long stripes of batter on the sugar. Keep in mind that the batter rises.

Bake the sponge fingers in approx. 8 minutes at 200°C. Set back the oven to 100°C, place the door a bit open and bake the fingers for another 15 minutes. They are done when they feel firm.

Decorate the bavarois with the mandarin parts and some chocolate. Place the chocolate sponge fingers on the glasses.
