Apple Crumble with almond paste and nuts


  • 500 gram FunCakes Special Edition Mix for Sweet Cookie and Crust
  • 250 grams of FunCakes Almond paste 1: 1 (softened with 1 egg)
  • 155 grams of soft unsalted butter
  • 1 egg
  • 125 grams of mixed chopped nuts (unsalted)
  • 5 apples
  • 75 gram rozijnen
  • Kaneel
  • 1 tablespoon of custard powder
  • 2 tablespoons of white caster sugar
  • FunCakes Bake Release Spray
  • Wilton Non-Stick Parchment Paper Pre-Cut
  • Springform -24,5cm e.g.  Kaiser

Wash the apples, cut in four and remove the core. Cut the quarters into thin slices. Mix the apple slices with 125 grams of chopped unsalted nuts, 75 grams of raisins, cinnamon, caster sugar and custard powder.

Preheat the oven to 170°C (convection oven 150°C). Put all the ingredients for the mix in a mixing bowl and mix it on a low setting to make a crumbly dough. Pay attention! If you mix too long it becomes a massive ball!

Cover the bottom of the pan with a piece of parchment paper. Spray the edges with bake release spray. Put 2/3 of the crumbs in the spring form, cover the bottom with the crumbs, lightly press and push the crumbs up against the edge. Cover the bottom with the soft almond paste.

Put in the apple mixture and push slightly. Cover the top with the remaining crumbs. Bake the apple pie in about 50-60 minutes until golden brown.
