Meringue pops

Materials:

  • 60 grams of FunCakes Egg White Powder
  • 360 ml water
  • 250 grams of FunCakes Icing Sugar
  • FunCakes Nonpareils Lots of Love
  • Pink Food Colour (e.g. Wilton Icing Color)
  • Cookie sticks
  • Piping bag
  • Decorating tip 1M (e.g. Wilton)
  • Baking paper

Prepartion:
Mix 60 grams of egg white powder with 360 ml water and let this rest until the egg white powder has fully been absorbed by the water. In the mean time, preheat the oven to 85°C (convection oven to 75°C).

Use a well degreased mixing bowl to mix the egg white and a couple of tablespoons of icing sugar. Mix at the highest speed until the egg white is nice and foamy. Now add, while mixing, the rest of the icing sugar spoon by spoon. Keep on mixing until you have a solid white mixture from which you can draw firm peaks. Add a small amount of pink food colouring and mix again for a nice equal colour.

Put a piece of baking paper on a flat baking tray. Place the decorating tip inside the piping bag and fill it with the mixture. Pipe nice round rosettes with a diameter of approximately 12 centimetres onto the baking paper. Gently slide the cookie stick underneath the rosette and sprinkle with the nonpareils.

Slide the baking tray into the oven and bake the meringues for 75 – 85 minutes. They may not discolour, but will feel firm after baking. Take the meringues out of the oven and let them cool off completely.
