Brownie pops with butterflies

Materials:

  • 360 gram FunCakes mix for Brownies
  • 2 eggs (approx. 100 gram)
  • 40 gram butter
  • 75 ml water
  • Round cake pan 20cm
  • 125 gram FunCakes mix for buttercream
  • 125 ml water
  • 150 gram unsalted butter
  • 200 gram cream cheese
  • 2 tsp vanilla extract
  • 500 gram FunCakes Flavoured chocolate melts strawberry
  • 30 paper straws
  • FunCakes nonpareils green
  • Butterflies

Preparation:
All the ingredients need to be at room temperature. Preheat the oven 175°C (convection oven 160°C). Put 360 gram mix for brownies, 2 eggs, 40 gram butter and 75 ml water in a bowl and mix on low speed for 3 minutes to a thick batter. Line a baking pan with buttered parchment paper and fill with batter and bake the brownie in approx. 40 minutes.

Add 125 ml of water to 125 grams of the mix for buttercream and beat with a whisk. Then let the mixture rest at room temperature for at least 1 hour. Beat 150 grams of unsalted butter for approx. 5 minutes until creamy. Add a part of the mixture to the butter and beat until the mixture has been completely absorbed before adding the next part. Once all of the mixture has been added, beat to a smooth buttercream (approx. 10 minutes). Add the cream cheese and mix this with the buttercream.

When the brownie cooled down, put it into the food processor and mix the cake with the dough hook and until it has a very fine structure. Now put in small portions of the cream until the dough becomes a ball. Make small balls of approx. 20 gram of the dough and put these on baking paper, placed on a baking plate.

Put 50 gram melts into a plastic or glass bowl. Place this bowl in the microwave and melt the melts at maximum power (± 800 Watt). Every 15 to 20 seconds, remove the chocolate from the microwave and stir it well so that the temperature is spread through it evenly.

Put the ends of the paper straw into the melted chocolate and put it into the dough ball. The chocolate makes sure that the paper straw stays into the ball. Put the cake pops for at least half an hour into the freezer.

Melt the remaining chocolate and dip the frozen cake pops into the melted chocolate. Make sure to put on the decorations directly with the non pareils and the butterflies, because the chocolate will be hard very soon.
